Description

ε-Polylysine is a natural antimicrobial peptide produced by Streptomyces albulus fermentation. It is effective in extending the shelf life of a variety of food products by inhibiting the growth of bacteria, yeasts, and molds.

Advantage:

  • Broad-spectrum antimicrobial activity against both Gram-positive and Gram-negative bacteria, as well as yeasts and molds.
  • Heat-stable, making it ideal for use in thermally processed foods.
  • Does not affect the taste, color, or texture of food products.
  • Completely biodegradable and recognized as safe (GRAS) by the FDA.
  • Effective in low concentrations, providing cost-efficient preservation.

FAQs

1, What you provide is ε-Polylysine or ε-Polylysine hydrochloride?

We provide both ε-Polylysine and ε-Polylysine hydrochloride, but normally the clients need ε-Polylysine or ε-Polylysine hydrochloride

2,what is the difference between ε-Polylysine, ε-Polylysine hydrochloride?

Chemical Structure:

  1. ε-Polylysine: This is a naturally occurring polymer composed of L-lysine amino acid units linked by ε-amino groups (the amino group attached to the ε-carbon, the carbon in the side chain of lysine). It is a linear, cationic (positively charged) polymer.
  2. ε-Polylysine Hydrochloride: This is the hydrochloride salt form of ε-Polylysine. It results from the reaction of ε-Polylysine with hydrochloric acid (HCl). In this form, the ε-Polylysine molecules are combined with hydrochloride ions.

Solubility:

  1. ε-Polylysine: It is water-soluble and can also dissolve in other polar solvents, though its solubility might be influenced by the pH of the solution.
  2. ε-Polylysine Hydrochloride: This form is typically more soluble in water compared to the free base form of ε-Polylysine because the hydrochloride salt enhances its solubility and stability in aqueous environments.

pH Stability:

  1. ε-Polylysine: The free base form might exhibit different stability and solubility profiles depending on the pH of the solution.
  2. ε-Polylysine Hydrochloride: The hydrochloride form is more stable across a range of pH levels, making it easier to use in various formulations where pH stability is important.

Usage:

Both forms are used as preservatives in food and cosmetic products due to their antimicrobial properties. However, the choice between the two may depend on the specific formulation requirements, such as pH or solubility.

In summary, ε-Polylysine hydrochloride is the salt form of ε-Polylysine, offering enhanced solubility and stability, particularly in aqueous solutions.
